Very chocolatey muffins difficulty ** #72
Makes 12
Preparing time: 20 minutes
Cooking time: 25 minutes
Ingredients:
- 175 g plain dark chocolate, broken into pieces
- 50 g slightly salted butter
- 275 g self-raising flour
- 1 tablespoon baking powder
- 50 g cocoa powder
- 125 g light sugar
- 150 g milk chocolate
- 1 egg, beaten
- 2 teaspoons vanilla extract
- 275 ml milk
- Melt the plain dark chocolate and butter in a heatproof bowl set over a saucepan of gently simmering water (don't let the base to touch the water)
- Mix together the flour, baking powder, cocoa powder, sugar and milk chocolate in a large bowl
- Beat together the eggs, vanilla and milk in a jug
- Pour a little into the melted chocolate and stir well until smooth
- Stir in the remaining milk mixture, then pour into the dry ingredients
- Stir together using a large metal spoon until just combined
- Divide the mixture evenly between paper muffin cases arranged in a 12-hole muffin tray
- Bake in a preheated oven, 190 C(375 F),Gas Mark 5, for about 20 minutes until well risen and just firm to the touch
- Transfer to the wire rack to cool
- Serve warm or cold with vanilla ice-cream, if liked.
